Easy Roast chicken and Spaghetti

Made this dinner yesterday for the family :-) This is one quick and fuss free recipe whenever I feel like feeding the whole family a well-balanced and wholesome meal! You should try it out too if you have the chance... will share recipe below since many people asked for it when I posted pix on FB yesterday! You'll be surprised by how easy it is... in fact I have no specific recipe when cooking... all by estimation and taste here and there.

Jayden had a big helping of spaghetti and kept asking for more.... he loved the chicken too and kept saying 'it's yummy mummy!' as long his tummy is happy, mummy is happy! :-)))))))))))

While roasting... the smell was heavenly!


Spaghetti to accompany the roast chicken

Recipe for Roast Chicken:
1 pack of chicken wings, I trimmed it to get wings and drummets
Sweet potato, cubed
Pumpkin, cubed
Carrots, cubed
French beans
Potatoes, cubed
Brinjals, sliced
Marinade: Olive oil, salt, pepper, teriyaki sauce, paprika, dried parsley, turmeric, minced garlic, cinnamon
1. Slice chicken pieces with knife to allow marinade to absorb. Marinade chicken in a large ziplock bag for at least 6 hours, overnight is good. Make sure all chicken pieces are covered in marinade.

2. Get ready roasting pan. Cover with aluminium foil for ease of cleaning.

3. Preheat oven to 190 degrees celcius.

4. Place vegetables in pan and toss with olive oil, salt, pepper and dried parsley. Make sure all are coated well.

5. Place chicken on the bed of vegetables. Dot butter cubes and drizzle some olive oil before sending into oven.

6. Pour out remaining marinade from ziplock bag and use pastry brush to baste the chicken pieces every 10 minutes. This is to keep the meat moist and flavourful!

7. Bake for 1 to 1 hour 30 minutes. Depending on your portions, check every now and then to make sure vegetables are cooked and chicken juices run clear.

Recipe for Spaghetti:

Spaghetti
Salt
Pepper
Mayo
Dried parsley
Black pitted olives, sliced
Handful of green peas

1. Estimate how much spaghetti you wanna cook for how many persons.

2. Boil a pot of water, toss enough salt in it and put spaghetti in to cook.

3. Once spaghetti is done to you liking, drain water away, keep a little in case pasta is dry later.

4. Quickly toss spaghetti while it is still warm with olive oil, salt, pepper, parsley and mayo. Adjust seasonings to your liking.

5. If pasta is a little dry, add pasta water and some olive oil.

6. Serve and bon appetit! :-)

Definitely wholesome meal for the family. I haven't tried roasting chicken...hehe. Will give your recipe a try one day.
